EASY TOMATO SOUP

   

Ingredients

Tomatoes. - 4
Onion. - 1 small
Garlic cloves. - 10
Corn flour/Maida - 2 tsp
Butter/ghee. - 1 tsp
Sugar. - 1 or 2 tsp
Pepper powder as per taste
Salt to taste

Method

Wash Tomatoes and cut into pieces, cut onion into pieces, add 5-6 garlic cloves, little salt and water, then pressure cook for 2 to 3 whistle.

Let it cool for sometime. Then make puree of it in mixie. Then strain it with strainer and keep aside.

Take one bowl, add corn flour or maida, mix it with little water and make paste.

Heat butter in a pan, add finely chopped garlic 2 or 3 cloves, fry for a second, then add tomato puree, sugar and little water, boil it for 5 min. Then add corn flour paste, boil it for 5 to 10 min. Switch off gas.

Sprinkle little pepper powder, salt, mix well and serve with roasted bread pieces.

Penne pasta in white sauce


Ingredients

 

Penne pasta cooked                  2 cups

Sweet corn boiled                      ½ cup

Butter                                           1 tbsp

Maida/corn flour                        1 tbsp

Milk                                               2 cups

Finely chopped                            2 tsp

Dried oregano                             1 tsp

Dried thyme                                 1 tsp

Grated cheese                             2 tbsp

Pepper   powder                         2 tsp

Coriander leaves   chopped      little for garnish



Method


Heat  butter in  a non-stick pan add finely chopped garlic and fry for  few seconds. Then add maida or corn flour  fry for 1-2 min in low flame.   Then add milk stir continuously    till the sauce becomes thick.

Then add oregano, thyme, cheese, black  pepper,  boiled sweet  corn , cooked  pasta and salt and  cook on medium flame for  1 to 2 min.

Garnish with finely chopped coriander leaves .    Serve  hot

Green apple salad


I saw this recipe in a food page posted by Meetha and Jayashree and I really got tempted seeing it and thought of preparing it.  The original recipe was published in the cook book by Asha S Pillar.  Thanks to all  for the wonderful recipe and lovely posts.   I love salads and I did not wait even a single day to try it.   Its very healthy and my son usually doesn’t prefer salads loved it very much.
 
 
 
1.       Green apple                                     1 cup chopped
2.       Curd                                                  1 cup
3.       Green chilly                                     2
4.       Mustard seeds                                ½ tsp
5.       Raisin                                                1tbsp
6.       Pinch of sugar
7.       Salt to taste
8.       Curry leaves few.
Method
 
·         Soak raisin for 10 min.
·         Beat curd and keep aside.
·         Chopped green apple, green chilly, mix this with beaten curd mix well.
·         Add soaked raisin, sugar  and salt .
·          Heat oil in pan add mustard seeds and curry leaves fry for 2 min.
·          Pour this on curd mix mix it well.
·          Keep it in fridge for 10 min.
·          Serve chill.

Radish salad (Mooli ka Raitha)


Mooli(radish)                                         1

Jeera powder                                        ¼ tsp

Curd                                                        ½ cup

Chilli powder                                         ¼ tsp

Chat masala                                           ¼ tsp

Method

Add grated mooli into curd, add chilli powder, chat masala,  jeera powder,  salt  and  mix well

Keep this in a fridge  for 5 to 10 min.

Serve with Paratta  or can be eaten as a salad in dieting.

Tiranga salad

This salad is prepared on the Independence day.  I wanted to create something innovative on the Independence day so I thought of preparing Tiranga Salad with three colors in our Flag.
 

Ingredients

 Grated carrot                              1 cup

 Grated coconut                          ¼ cup

Chopped coriander leaves         2 tbsp

Lemon                                             half

Salt to taste

Pinch of pepper


Method  

Mix  grated carrot, coconut and chopped coriander leaves. Add salt and pepper powder then squeeze  lemon juice and  mix well and  serve  soon.
